I have Chronic Pancreatitis. I have to be managed on high dose meds. Its the worst pain ever!!! If I, personally, were to ever have a pet develop it. *PSA* : for those without the money/space for a stand mixer, check out the *Danish whisk* !! My sister, who also bakes, got me one for Christmas and it is life changing!! I've used it to mix Claire's focaccia recipe, many a sourdough autolyse, and a number of other wet doughs. Not to mention, it's like $5 and can just go in the drawer with your other tools. Don't let your lack of stand mixer stop you from making these incredible recipes!! Get a danish whisk!! Work out your arms making awesome bakes!

Re yeast. I buy it in bulk from our food coop and one time I got a dead batch. Now I always keep my yeast in the freezer! I bake bread all the time and man, it's a bummer when the yeast doesn't do it's thing.

I’m making these today! I transcribed the recipe for reference. Mix flour and salt in stand mixer bowl Scald the milk (30-60 seconds). Mix in butter and honey. Allow to cool to 100 degrees Proof the yeast in 2 tablespoons of the milk mixture. Mix the dry and wet ingredients for 6-8 minutes in a stand mixture. In the meantime, oil a bowl. Transfer the dough to the oiled bowl. Dough should be sticky but well-formed. Cover with plastic wrap and allow to rise for a couple of hours or until doubled in size. Meanwhile, line a baking sheet with parchment, lightly oil and dust with cornmeal. Pat the dough on the baking sheet into a ½” disk. Cover and refrigerate for 12 hours. In the morning, cut out the dough into ~3.5” round muffins. Return the muffins to the fridge. Heat a dry skillet over low. Cook the muffins on the first side for 5-7 minutes. Rotate the man every few minutes. Do not touch the muffins. When the muffins smell yeast and delicious and the top looks matte, flip the muffins. Cook until browned. Allow the muffins to cool for 10 minutes or so. Open them with a fork. Enjoy as a breakfast sandwich or with candied kumquats.

Claire is a baker that is in another league than me but I can contribute something here. You will get better results with everything when using the mixer if you put the liquid ingredients in the bowl first.

I tried this recipe and the flavor was great but for some reason the low and slow method did not work with my stove :( I have electric not gas so maybe that's it... I set it to medium low (a 4 setting on my stove) , used cast iron, and the dough was adequately chilled but they took FOREVER to brown on both sides. By the time they were nicely browned they had deflated and by the time they cooled they were like hockey pucks. For the rest of them, I cooked them on a higher setting to brown them (6-7) and then popped them in the over at 350 degrees for 10 minutes and they were perfect. This was like the third recipe from her book that's taken a lot longer than it said it would to finish baking so it's probably just my oven/stove that's wonky. Highly recommend for the flavor but don't feel bad if you have to adjust the instructions.

"English" muffins are called crumpets. Its Spring - if you want to do something "English", make SCONES. Warm, scones (US calls them biscuits). Cut them in half. Inside facing up, butter both faces of the scone. Add jam (traditionally Strawberry but I like Cherry). Then plop some clotted cream on them. Get some refreshing hot tea and enjoy. No crumpets in Spring. SCONES!

Love the show but English muffins are definitely English and are just called muffins. There are recipes for them in English cookery books from the 18th century and the nursery rhyme "the muffin man" is about them.The guy who introduced them to America was just using his mother's recipe. :)
