True or False: Baking is rigid and only uses pantry ingredients, not fresh produce, and is only for dessert. FALSE! Part of being a dessert person is celebrating all the possibilities that baking offers -- in this episode, it’s a beautiful savory tart filled with caramelized onion and endive and topped with a fresh, bright salad of bitter and tender greens (this salad pizza is all dressed up). Who said baking can’t be dinner?

Caramelized Endive Galette
6 large Belgian endive (1 lb. 13 oz / 822g)
2 ounces (56g) Parmesan cheese
2 tablespoons plus 1/4 cup extra virgin olive oil (3 oz / 85g)
1 teaspoon fresh thyme leaves, plus more for sprinkling the top
2 teaspoons plus 1 tablespoon white wine vinegar
Kosher salt and fresh ground black pepper
All-purpose flour, for rolling out
1 large egg, beaten
1/2 small shallot, very finely chopped
1 tablespoon Dijon mustard
1 teaspoon honey
1 small radicchio, leaves separated and torn
1/4 cup fresh flat-leaf parsley leaves
Flaky All-Butter Pie Dough
1 stick plus 2 tablespoons unsalted butter (5 oz / 142g), chilled
1 1/2 cups all-purpose flour (7 oz / 200g) plus more for rolling out
1 tablespoon sugar (0.46 oz / 13g)
3/4 teaspoon Diamond Crystal kosher salt

Actually, beeswax sheets are not sustainable just because they don't cause plastic waste. Growing cotton is very resource intensive, it takes a lot of water (and pesticides if it's not organic). Also I just read that the colour being used to dye the sheets can be toxic as well as the wax which might be mixed with synthetic wax which is cheaper... You will have to use a beeswax sheet very often to have the same footprint as you have with single use plastic. I think the silicone bags are a good choice. Great recipe :)

I tried this recipe but with a brown butter, brown sugar and crushed walnuts mixed up as a base and topped it with sliced apples. Then baked it. I was amazing!!! Tasted a little bit like baklava

I have made this recipe twice. The first time I messed up on my crust. Second time I followed the recipe. The crust was flaky and crispy. It’s so much better than the store bought kind. I’m buying Dessert Person because of this recipe. ❤️❤️❤️

Have you tried beeswax lined sheets as an alternative for wrapping rather than the silicone bags? i find the sheets a little easier to use. Love the idea of slices in a pie dough, also I learned some things that I never learned in culinary school hehe.

I know you prpbqbly can't and may not even want to do anything in the vein of "Gourmet Makes," which is completely understandable, but I do hope we'll get to see you tackle stuff that challenges you more; because you are so damn inventive when working outside of your culinary comfort zone. I'm not saying we need to see you reproduce XYZ, but I absolutely loved your process for solving problems when the answer wasn't already a given; and I hope we'll get to see at least some content like that, because you really amazing in those less conversational situations.

I'm currently using a cling wrap that is biodegradable when added to the compost bin or landfill it is digested by the natural bacteria that's present. It's working really well for me, it's a little like the cling wrap of old in that takes a gentle hand to get off the roll, but I feel the newer plastic products have been so over-manufactured to be easily and evenly whipped of the roll and over a bowl. This new one is also a good stick to all surfaces and has a little stretch. I'm in Australia and it is an Australian design. I don't have any connections to the company I just refuse to use harmful products and anything that won't be around when my grandchildren are in their 80s.

Tried this yesterday and it's AMAZING!! I think onions might be missing from the ingredient list but I just guessed based on what I saw in the video (about 2) and it definitely seemed right. Side note: this pie dough recipe is the best I've ever used!

Claire, you may find it beneficial to make yourself some of those cloth covers, that are "soaked" in bee's wax and becomes like a cling wrap, and is reusable. You wipe clean, and reuse. It's a relative easy craft project, and you can make different sizes, to suite your needs. Perhaps you've already made some, but I thought I'd share since you're trying to rid your kitchen of one-use plastics.

Make this. I did yesterday, The caramelized onion and endive filling is delicious. My fussy, skeptical Italian husband woke up in the middle of the night and finished it off. The instruction for the flakey pie crust is the best I have found online. I am especially grateful that Claire is as allergic to cleaning her food processor as I am. This is a keeper and a Master Recipe to treasure.

Hey Claire, you said you were having trouble finding a plastic-free alternative to wrap your doughs in while refrigerating - have you tried waxed wraps? I use them as a replacement for plastic when wrapping loads of things for refrigeration, like cheeses, avocados, even just over a plate of left-overs.

I made this galette tonight and i feel bad cus I spent over an hour caramelising the onions and endives and it just turned out really bitter, I tried adding sugar and butter to save it just wasn’t doing it any justice. The dressing is really nice and I like the overall concept of a salad on top of pastry, but I think endives just aren’t really my thing 🥲 i might just do a caramelised onion tart in the future with the endives just in the salad on top

Salad Pizza is a real thing. It is really the only way I want eat a pizza. Servers never understand when I speak very carefully when ordering , " "Please bring the pizza and the .....salad at the same time". Usually they roll their eyes and say that its unlikely the kitchen can coordinate such a feat.
