Claire Saffitz, author of the new cookbook “Dessert Person,” is in the Munchies Test Kitchen making the Eiffel Tower of pastries: croquembouche. This celebratory dessert is perfect for the holiday season- a tower of individual cream puffs coated in crunchy caramel. Claire breaks down each step of the croquembouche process, like making the cream puffs with choux pastry, topping them with craquelin, and filling them with a dark chocolate and creme fraiche cream. The individual puffs are dipped in caramel, assembled into a cone-shaped tower, and drizzled in caramel threads. The result is a pastry masterpiece. Check out the recipe here: to Munchies here:

In the recipe post on the munchies website there is an error they forgot to write the 1/2 cup of water in the ingredients list be careful you need 1/2cup water and 1/2 milk

This recipe turned out really well! A good portion of my puffs burnt on the bottom because they started on the bottom rack and when I went to switch them 20 minutes in, some of them deflated. I ended up making a small tree/tower but it all tasted great.

Yes, it is a wedding desert in France. Ive only eaten those in weddings ever haha For us, wedding means croquembouche. Like we know it's going to be there and its always very exciting! Also, your "choux" are very small, they can be up to 5 times bigger than that, usually they are around twice bigger. Usually the ones on the bottom are very big and they progressively smaller as they go up. But the taste doesn't change :-)

Claire is right, in France this pastry is traditionally eaten at weddings or baptisms. We don't call it "croque en bouche" though, we call it "pièce montée" which could roughly be translated as "constructed piece". The focus of the name isn't on the crunchy caramel but on the structure of the cake, that could be made to ressemble a church, a cradle or something linked to the ceremony it's made for (meaning, if you're going to a wedding you're likely gonna eat a bit of a huge pièce montée that looks like a church).
